External Out 1 and 2 verses Pan

Using Ableton Live 9 and brand new to it. Was watching Matt McCoy on http://www.youtube.com/watch?v=THJvpxZQ4lI and he routed the cues to left and loops to right via the "Audio to" drop down/ External Out option. I would've used the pan knob on each channel for the same connections (out via the Mac's headphone out). What's the difference here? Any pros or cons for either?

Single mono output sums the left and right channels of a stereo track. Panning discards the 'off' side of the pan and can be missing significant audio.
